1st Pork and Broa Gastronomic Festival

Binaural Nodar is pleased to be associated with the 1st Pork and Broa Gastronomic Festival by showing a documentary made in the parish of Campia, in the municipality of Vouzela, by Liliana Silva, which follows the traditional production of broa and bola.
Following tradition, the flour that derives from milling the grain is sifted into the dough and softened with boiling water, to which salt and homemade yeast are also added.
With the help of the dough hook, a more homogeneous mixture is formed, until it is possible to get your hands on the dough, which is kneaded before rising. As there are practices that cannot be missed and in order for the process to be successful, a cross is made in the dough and the prayers left from the “ ancient ones ” are repeated. After this ritual, a towel is placed over the dough and the sieve is placed on top of it.
In the meantime, the fire is added to the oven, which heats up slowly until the embers are removed and the interior is swept using the emblematic broom. It’s time to make the bolas – where sardines, pork or sausages are a must – and the broas, which are baked until they are cooked through.
